für 4 Portionen:
7 Eier
200 g Mayonnaise
1 Becher Naturjoghurt
1 Glas Spargel
1 Eßl Currypulver
Salz
1 Prise Zucker
Die Eier hart kochen, abschrecken und schälen
Den Spargel abgießen, dabei die Flüssigkeit auffangen und den Spargel in 1 – 2 cm große Stücke schneiden.
Mayo, Joghurt, Salz , Curry und Zucker mischen.
Etwas von dem Spargelwasser zugeben und und alles gut verrühren.
Den Spargel schon mal untermischen.
Die Eier in kleinere Stücke schneiden und vorsichtig unter die Mayomasse heben.
Danach den Salat 2 – 3- Stunden im Kühlschrank ziehen lassen.
Mit kleingeschnittenem Schnittlauch servieren.
Dazu essen wir frisches Bauernbrot, manchmal auch Bratkartoffeln.
