1 Pkg. Tante Fanny “ Frischer Quiche- und Tarteteig “ 300 g
200 g Räucherlachs in dünnen Scheiben
1 – 2 Eßl Sahne – Meerrettich
250 g Mascarpone – ich hatte Ricotta, der hat nicht ganz so viel Fettgehalt
4 Eier
1 Eßl Mehl
250 ml Creme fine
50 ml Milch
Pfeffer und Salz
1 Eßl Dill – fein gehackt
außerdem:
etwa 300 g grüner Spargel waschen, die holzigen Enden evtl abschneiden,
in kochendem Salzwasser 2 – 3 Min blanchieren und dann in Eiswasser runterkühlen.
Den Backofenl auf 200°C vorheizen
Den Teig mitsamt dem Backpapier in eine geeignete Form ( 26 er Springform ?) legen,
und am Rand etwa 2 – 3 cm hochziehen.
Mascarpone mit dem Meerrettich vermischen und auf dem Teigboden verteilen.
Den Lachs in kleinere Stücke zerrupfen und die Mascarponemischung damit belegen.
Das Mehl mit Milch , Sahne, Eiern und Dill gut verquirlen,
mit Pfeffer und Salz würzen und über den Lachs gießen.
Jetzt die abgekühlten Spargelstangen auf der Tarte nach Belieben verteilen.
Und danach die Quiche im Backofen bei 180 -200° C auf der untersten Schiene ca. 45 Min. backen.
Wenn die Oberfläche zu schnell dunkel wird, einfach mit Alufolie abdecken.
